Ingredients for pineapple  matcha latte: coconut milk, pure maple syrup, matcha green tea powder, and pineapple.
  • Pineapple (fresh or frozen): Adds a natural sweetness and tropical flavor.
  • Unsweetened coconut milk: Adds creamy texture and rich tropical undertones. Go for unsweetened to control sweetness, and use a carton (not canned) for the best texture and lower fat. Okay to substitute with soy milk. 
  • Pure maple syrup: A touch of natural sweetness that enhances the pineapple without overpowering it.
  • Matcha green tea powder: I prefer using ceremonial-grade matcha for its deep green color and smooth flavor, but culinary-grade matcha works too.

How to Prepare

This layered matcha pineapple latte is as fun to make as it is to drink. Here’s how to do it:

Step 1: Add the pineapple chunks, half of the unsweetened coconut milk, and pure maple syrup to a bullet blender cup

Step 2: Blend the pineapple milk until smooth and creamy.

Step 3: Pour the pineapple milk into a tall glass with ice.

Step 4: Rinse out the blender cup and add the rest of the coconut milk and the matcha green tea powder.

Step 5: Blend the matcha mixture until smooth and creamy.
