Sweet Potato Toast

This tasty and fun sweet potato toast is made in the air fryer. We're giving you three ways to enjoy this healthy breakfast. It's all vegan, gluten-free, soy-free, oil-free, and a meal prep favorite.

What you need to make this sweet potato toast 3 ways

  1. Sweet potatoes
  2. Avocado
  3. Cherry or grape tomatoes (sliced plum tomatoes works well too)
  4. Everything bagel seasoning
  5. Oil-free hummus
  6. Chopped arugula or microgreens
  7. Peanut butter (or sunflower seed butter)
  8. Banana
  9. Cinnamon

This recipe starts with two good size sweet potatoes

Because this sweet potato toast freezes well, you can double or triple this recipe for meal prep. It gives you a convenient grab-and-go option on that busy morning when you need something fast.

Smashed avocado, sliced tomato, and everything bagel seasoning (no salt)

This bread-free version of avocado toast is a winner! The smashed avocado and sliced tomato are a nutritional match made in heaven. What takes this up a notch is the sprinkle of seasoning on top. Everything bagel seasoning can be found at most grocery stores. However, most of the brands on the market have salt. Hummus and dark leafy greens

Spreading oil-free hummus on this toast provides a nice savory balance to the sweetness of the sweet potato. Topping it with chopped arugula or microgreens gives this toast a boost of nutrients from dark leafy greens for breakfast.

Peanut butter, banana, and cinnamon

Okay, peanuts are technically a legume. However, for culinary purposes, they are treated as a nut like cashews or almonds—which you could also substitute for peanuts. If you have a nut allergy, sunflower seed butter works well. Spread peanut (or seed) butter on this sweet potato toast, add sliced banana, and finish off with a dusting of cinnamon. Yum!

How to prepare

Wash and dry sweet potatoes. Carefully trim the edges and rough parts of the sweet potatoes and cut them into ¼- to ½-inch slices lengthwise.

Pro-Tip

Do not peel the sweet potatoes beforehand. Not only does the skin help to keep the toast slices intact, but it also boosts the nutritional density.

cut the sweet potatoes into ¼- to ½-inch slices lengthwise

Place sweet potato slices into an air fryer and cook at 300 F (150 C) for 15 to 17 minutes. If oven-baking, bake on a parchment- or silicone mat-lined baking sheet at 350 F (175 C) for 25 minutes. You want the toasts to be tender but not toasted—they will toast up in the toaster when you're ready to assemble and eat.

If meal prepping these sweet potato toasts, allow them to cool to room temperature before storing. Keep these convenient toasts in a covered container in the refrigerator for up to 4 days. If freezing, separate the toasts with a small piece of parchment paper. Otherwise, they'll be difficult to pry apart when you want to make them. These sweet potato toasts freeze for up to 3 months.

Toast, assemble, and eat

When you're ready to enjoy these fun little toasts, remove them from the refrigerator or freezer. Pop one or more into the toaster. Toast until it starts to crisp on the outside.

Remove the sweet potato toast slices from the toaster and top with any or all of these combinations:

  1. Mashed avocado, sliced cherry tomatoes, and everything bagel seasoning
  2. Oil-free hummus, fresh chopped arugula (or microgreens)
  3. Peanut butter (or sunflower seed butter), sliced banana, and cinnamon

    I'm a big fan of these! I used almond butter instead of peanut butter. My roommate doesn't like bananas, so she added strawberry jam and loved it.
