Why You'll Love This Watermelon Mocktail

  • Naturally sweet with zero added sugars
  • Hydrating and electrolyte-rich
  • Vegan, gluten-free, oil-free, and alcohol-free
  • Easy to whip up in 5 minutes
  • Perfect for warm weather or any time you need a refreshing pick-me-up

Health Benefits of This Drink

  • Watermelon is high in lycopene and L-citrulline, compounds that support heart health and reduce muscle soreness. L-citrulline aids in nitric oxide production, helping to lower blood pressure.
  • Coconut water replenishes electrolytes like potassium and magnesium, making this a great recovery drink.
  • Lime juice adds a burst of vitamin C and aids digestion.
  • Mint helps soothe the stomach and adds a cooling effect that makes this drink incredibly refreshing.

What You Need to Make This Tasty Mocktail

Watermelon cubes in a glass bowl with fresh mint sprig on top and ½ lime on the side.
  1. Watermelon: Naturally sweet and juicy, watermelon creates the base of the mocktail with its high water content and subtle fruity flavor.
  2. Lime: Adds tartness and brightness, balancing the sweetness of the watermelon.
  3. Coconut water: Adds electrolytes and a subtle, nutty-sweet flavor that enhances hydration.
  4. Mint: Fresh, cooling, and aromatic, mint adds the perfect finishing touch.

Substitutions and Variations

  • Swap coconut water with sparkling water for a fizzier and less sweet experience.
  • Add more lime juice or a pinch of lime zest if you prefer a more tangy, citrus-forward mocktail.
  • Infuse with ginger or basil for a more complex herbal flavor.

Step 2: Blend until smooth and creamy. Pour into glasses and top with a finely chopped mint leaf. Enjoy immediately!

Expert Tips

  1. Chill your watermelon and coconut water ahead of time for an ultra-cold drink without relying heavily on ice.
  2. Triple the batch for parties and serve in a pitcher with a garnish of mint sprigs and lime wheels.

Serving Suggestions

  • Pair it with an appetizer: We recommend it with either our traditional homemade guacamole or edamame guacamole, and oven-baked tortilla chips. This watermelon mocktail is also a perfect pairing with our jalapeno poppers.
  • Enjoy it with a bowl: Nutritionally, this drink pairs beautifully with our high-protein chickpea tempeh bowl, nourish bowl, and peanut butter greens buddha bowl.
  • Summer eats: Enjoy this with our black eyed peas corn salad, arugula quinoa salad, cucumber gazpacho, or vegan pesto pasta salad.
  • Brunch: This watermelon mint mocktail also works with savory brunch classics like mushroom avocado toast, tomato avocado toast with homemade vegan feta, crustless vegan quiche, and vegan eggs benedict.

Recipe FAQs

How do I store leftover watermelon mint mocktail?

Is watermelon good for hydration?

Yes! Watermelon is about 92% water and is packed with electrolytes like potassium, making it ideal for hydration.

Is there another liquid I could substitute for the coconut water? Would plain water work?

Hi Margaret, it's Gigi. Great question. Yes, you can even omit the liquid all together since you have ice and there's lots of water in the watermelon already.
