This Watermelon Mint Mocktail is the perfect summertime, get-off-of-work, happy hour drink. It's sweet, refreshing, and won't leave you feeling tired or sluggish. Made with only 4 ingredients, this watermelon mocktail takes less than 5 minutes to whip up. This healthy mocktail recipe has no added sugar and, of course, is nonalcoholic.

Watermelon Mint Mocktail has 4 key ingredients:

  1. Watermelon
  2. Lime
  3. Coconut water
  4. Mint

This mocktail recipe was supposed to be a smoothie. You see, we were testing several smoothies and smoothie bowl recipes while we were in Atlanta together. When we added the watermelon, lime, coconut water and ice to the blender, we knew it wouldn't be smoothie consistency. We were curious about the flavor, so we went with it. All it needed was a little mint.

The drink was light and refreshing. We agreed, it's a mocktail, not a smoothie!

Since watermelon has such a high water content, adding a cup of ice for the chill along with ½ cup of unsweetened coconut water and the juice from half a lime is all you need. The coconut water and lime go well together and enhance the flavor of the watermelon. Floating a mint leaf or two on top infuses a subtle flavor to this refreshingly sweet mocktail.

This healthy mocktail is literally guilt-free

This mocktail is perfect for girl's night. Enjoy it in any fancy stemmed glass you have on hand. It's also a great way to treat yourself as you relax on the patio after work. Plus, it's guilt-free with less than 50 calories per glass, and a good source of Vitamin C.

Watermelon contains a compound called citrulline—which aids in nitric oxide production helping to lower blood pressure. Plus, the coconut water is high in potassium, a mineral that also helps to reverse hypertension. Who would've thought a mocktail could promote heart health?

This recipe makes two mocktails. Although it was so good, I ended up drinking both. Lol! 😂

Ingredients

  • 1 ½ cup watermelon, cubed
  • ½ cup unsweetened coconut water
  • Juice from ½ lime
  • 1 cup ice
  • Fresh mint for topping

Instructions

Put watermelon, coconut water, lime juice and ice into a high speed blender. Blend until smooth. Pour into two glasses and top with fresh chopped mint.

    Is there another liquid I could substitute for the coconut water? Would plain water work?

      Hi Margaret, it's Gigi. Great question. Yes, you can even omit the liquid all together since you have ice and there's lots of water in the watermelon already.
