Cilantro Lime Ranch Dressing (LOW FAT)

Cilantro lime ranch dressing is a great sauce for your southwest and Tex-Mex dishes. With less than 40 calories per generous serving, this tasty dressing is oil-free, nut-free, low-fat, gluten-free, and vegan.

This recipe makes four servings and takes only 10 minutes to prepare. It's also a great recipe if you're doing the Daniel Fast.

Cilantro Lime Ranch Dressing has 9 key ingredients:

  1. Silken tofu
  2. Fresh cilantro
  3. Lime
  4. Apple cider vinegar
  5. Garlic
  6. Dried parsley
  7. Onion powder
  8. Dried dill
  9. Homemade date syrup (or pitted date)
The individual ingredients for cilantro lime ranch dressing: silken tofu, cilantro, lime, date, garlic, and spices.

The silken tofu provides a creamy base. Fresh cilantro and lime combined with a classic ranch seasoning blend of garlic, parsley, onion powder, and dill make it the perfect combination. We added homemade date syrup (or a date soaked in hot water) to balance the flavors.

If you like it spicy, add some fresh or pickled jalapeno peppers or a pinch of cayenne pepper.

How to prepare this low fat ranch dressing

If using a pitted date instead of homemade date syrup, soak the date in hot water for at least 5 minutes to soften.

Then add all the ingredients to a mini blender and blend until smooth and creamy.

Add more water for a thinner consistency. Salt to taste and enjoy!

Leftovers keep well in the refrigerator for up to five days in an airtight container, like a mason jar.

Equipment

  • 1 mini bullet blender

Ingredients  

  • 6 ounces Silken Tofu about half package of Mori-Nu, or whatever brand you have available
  • 1 teaspoon apple cider vinegar
  • 1 small garlic clove minced
  • ½ teaspoon dried parsley
  • ½ teaspoon onion powder
  • ¼ teaspoon dried dill
  • ⅓ cup of fresh chopped cilantro
  • Juice from ½ lime
  • 1 tablespoons Homemade Date Syrup (or ½ pitted date soaked in hot water for at least five minutes to soften)
  • 2 to 3 tablespoons water
  • salt to taste
