Vegan Sliders

These healthy black bean vegan sliders are made with whole plant food ingredients. These tasty mini burgers are crisp on the outside and soft and chewy on the inside. This recipe is gluten-free, oil-free, soy-free, nut-free, and fun to make!

This recipe makes 12 to 15 sliders or 4 to 5 full-size burgers. It's a modified version of the black bean burger recipe found in The Plantpower Way Cookbook.

What you need to make these vegan sliders

  1. Black beans, low sodium or no salt added, canned or *cooked (or cooked adzuki beans)
  2. Cooked brown rice (short grain is recommended)
  3. Beet
  4. Garlic powder
  5. Onion powder
  6. Ground flaxseeds
  7. Black pepper
  8. Arrowroot powder (or tapioca starch)
  9. Coconut aminos
  10. Homemade BBQ Sauce (or good storebought that does not have added sugar)

*Note: One 15-ounce can of black beans is about 1 ½ cups cooked.

Optional ingredients for serving or topping

  1. Romaine lettuce leaves
  2. More homemade BBQ sauce
  3. Vegan Ranch Dressing
  4. Dijon or yellow mustard
  5. Dill pickles
  6. Scallions (green onion)
  7. Sliced avocado
Ingredients for vegan sliders: black beans, cooked brown rice, cooked diced beet, BBQ sauce, and seasonings.

How to make these black bean vegan burger sliders

If you don't have cooked rice, start by making the rice. Set aside to cool to room temperature.

Add a small beet to a medium pot of water and gently boil for about 25 to 30 minutes until cooked. Run the cooked beet under cool water to handle. Use your fingers or a small paring knife to remove any skin on the beet. Then, dice it into small pieces.

Drain and rinse a can of low-sodium or no-salt-added black beans (or adzuki beans) and set aside. If making dried beans from scratch, cook and cool them to room temperature and set aside.

Assemble and cook the slider patties

Put cooked and cooled brown rice and black beans into a large mixing bowl. Using clean hands, mash the brown rice and black beans together into a mushy mixture. It gets messy, so you'll want to rinse your hands off when you're done.

Add the cooked diced beets and coconut aminos to the burger mixture.

It's important to pre-mix the dry ingredients before adding to the burger mixture. This aids in evening out the spices across the mixture. Put the black pepper, garlic powder, onion powder, ground flaxseeds, and arrowroot powder into a bowl and stir to combine with a small spoon.

Sprinkle the dried seasoning over the burger mixture. Add the BBQ sauce over the top, and use a wooden spoon to mix well and smash up big chunks of beets and beans.

Use your hands to form small slider patties and add them to the air fryer.

Put the slider patties into the air fryer and cook them at 370 F (190 C) for 15 minutes. The sliders should be crispy on the outside and soft but chewy on the inside. If you don't have an air fryer, you can bake them on a parchment-lined baking sheet at 370 F (190 C) for 25 minutes.

Enjoy these healthy vegan sliders immediately. Alternatively, store leftovers in a covered container in the refrigerator for up to four days. These little vegan burgers can be frozen for up to four months. To reheat, put frozen sliders in the air fryer at 320 F (160 C) for 10 to 12 minutes.

Frequently Asked Questions

Are vegan burgers healthier?

These homemade vegan burgers are healthier than the meat-based alternative. Meat-based burgers have a much higher amount of saturated fat, dietary cholesterol and other compounds like IGF-1 and TMAO shown to promote inflammation and oxidative stress—linked to chronic disease. The ingredients in this vegan burger are made with whole plant foods high in fiber, low in fat, and rich in micronutrients like magnesium, B vitamins, and potassium. Eating a diet rich in whole plant foods is shown to help with weight loss, and the prevention, treatment, and reversal of several chronic conditions.

What's the difference between a vegan burger and a veggie burger?

Vegan burgers are devoid of all animal products, whereas a veggie burger may contain eggs or dairy.

Can I grill these vegan sliders?

Yes, but due to the small size of these sliders, we recommend using a vegetable grill basket and grilling at a lower heat temperature (between 350-400 F) so they don't burn.

Ingredients  

  • 1 small beet

  • 1 tsp garlic powder

  • 2 Tbsp Homemade BBQ Sauce or a good storebought BBQ sauce plus more for serving
