With only four key ingredients, you can have this healthy alternative to traditional mayo in under 10 minutes.
This low-fat vegan mayo can easily be altered to add Sriracha for heat, seasonings for a ranch dressing, or fresh herbs to make it a healthy herbed aioli spread. We also use this mayo in our Carrot Tuna Salad.
With only 20 calories per serving, this mayo is also a low-calorie option.

How to Prepare
Put all ingredients into a blender and blend until smooth and creamy. There's no need to drain the silken tofu. Just put the whole thing in and blend. I use a mini blender when I make this, and it works great.

- 12.3 oz 349 grams package of silken tofu (I used Mori-Nu extra firm silken tofu)
- 2 Tbsp fresh lemon juice
- 1 tsp apple cider vinegar
