This cherry oat fruit pizza is like a healthy version of a McDonald's cherry pie in pizza form. This dessert is made with whole plant food ingredients, so there's no added sugar. The base is a sprouted whole-grain tortilla topped with cherries, rolled oats, dates, ground flaxseeds, fresh lemon juice, and sliced almonds. This dessert fruit pizza is oil-free, soy-free, and delicious!
This fruit pizza recipe was created on Chef AJ LIVE! Iron Chef SMACKDOWN. You see, Sersie and I were presented with three secret ingredients that our husbands purchased and hid from us. On the day of the show, Chef AJ gave us the okay to look. The ingredients were cherries, oats, and dates.
What initially went through my mind was smoothie or smoothie bowl. Then I thought of cherry oat muffins. But in the end, I landed on a dessert pizza. I must say, I've made it a few times since the show and it is yummy!
What you need to make this fruit pizza:
- Sprouted grain tortilla
- Fresh cherries (frozen will work)
- Simple Homemade Date Syrup
- Rolled oats
- Unsweetened apple sauce
- Ground flaxseeds
- Sliced almonds
- Lemon
How to prepare
Destem and slice cherries in half or thirds, and remove pits (see Pro Tip for slicing fresh cherries). Set aside. (Note: If using frozen pitted cherries, thaw first, then slice.)
Preheat oven to 375 F (190 C).
Prepare oat crumble topping by grinding half of the rolled oats in a mini blender or mini food processor. Combine ground oats with whole rolled oats and ground flaxseeds. Stir in only 1 tablespoon of the Simple Homemade Date Syrup (the remaining 3 tablespoons of date syrup will be used as the sauce for the tortilla pizza crust), the apple sauce, lemon juice, and a pinch of lemon zest. Fold in the sliced almonds. The wet ingredients should be absorbed into the dry ingredients but not too wet (similar to a raw cookie dough consistency). If the oat crumble mixture is too wet, add a little more rolled oats to absorb the moisture. If the mix is too dry, add a little apple sauce.
Take the sprouted grain tortilla and spread 3 Tablespoons of Simple Homemade Date Syrup onto the base. Then add the sliced cherries. Be sure to spread out the cherries evenly across the tortilla crust. Finally, add small dollops of the oat crumble on top of the pizza.
Bake the pizza at 375 F (190 C) for 15 to 18 minutes or until golden brown.
Pro Tip for slicing fresh cherries
There are two ways to slice fresh cherries. One is to slice the cherry in half and remove the pit. The other is to slice the cherry on each side of pit, and then eat whatever is left on the pit before discarding. I prefer to do the latter. 😉 It both gives me a clean even slice, as well as something to nibble on while I'm pulling this together.
Optional but recommended addition to this dessert pizza
This amazing cherry oat fruit pizza is absolutely delicious with a scoop of Guilt Free Banana Nice Cream.
