So you go to the grocery store to buy bananas for your smoothie. However, not a ripe, yellow banana anywhere to be found on the display table. Well, while you're waiting for those bananas to ripen, grab two and make these chips. You'll be glad you did!
What you need to make these air fryer banana chips
You only need unripened green bananas. Feel free to substitute green plantains.
How to make these savory banana chips
Slice off the stem of the banana. Carefully peel about halfway, giving you a better grip on the banana. Use the slicer side of aย box graterย to cut into chips. When you reach the halfway point, continue to peel back the banana, leaving a small amount to maintain a grip as you continue to slice.ย
Spread chips into the basket of the air fryer. Set for 380 F (195 C) and cook for 8 minutes. Check for doneness and continue cooking for another 2 to 3 minutes or until toasty golden and crispy.ย
Enjoy these banana chips immediately, or store them in an air-tight container for up to a week. They will lose their crispness as they sit. However, you can throw them back into the air fryer for 2 to 3 to re-crisp. These are also freezer-friendly if you're batching these for meal prep.
Ways to serve these chips
There are several options to flavor these yummy, healthy chips. You can sprinkle them with some everything bagel seasoning, harissa or chipotle powder before you put them into the air fryer.

Hi Kathi - They can be made with ripe bananas, but the intention was to make a savory chip option (in lieu of oily, salty, fried potato chips). These unripe green bananas are high in resistant starch. Resistant starch has gut microbiome benefits. I hope this helps.
