Ingredients
2 cups fresh jackfruit, chopped
4 Tbsp diced red onion
½ of large jalapeño, diced
¼ cup diced red bell pepper
¼ cup fresh cilantro, finely chopped
Juice from ½ of a lime
Salt to taste
Instructions
Combine all ingredients into a mixing bowl, and serve. Can be used as a topping for tacos, a rice and bean bowl or with Oven Baked Tortilla Chips.
