Ingredients
- 2 cups fresh jackfruit chopped
- 4 Tbsp diced red onion
- ½ of large jalapeño diced
- ¼ cup diced red bell pepper
- ¼ cup fresh cilantro finely chopped
- Juice from ½ of a lime
- Salt to taste
Instructions
- Combine all ingredients into a mixing bowl, and serve. Can be used as a topping for tacos, a rice and bean bowl or with Oven Baked Tortilla Chips.
