Sweet and Sassy Jackfruit Salsa

This Sweet and Sassy Jackfruit Salsa came about when I bought my first fresh jackfruit. I purchased it young and let it ripen because I was waiting for Gigi to find one, so we could cut into this intimidating fruit together. She could not locate fresh jackfruit where she lives. The green jackfruit turned brown, and I couldn't wait any longer—so I boldly cut it open LIVE in the Facebook Group.

How to cut a fresh jackfruit

After tasting jackfruit, the first thing that stood out to me was its distinct sweetness and hearty texture. I intuitively knew that this fruit would make a great salsa because of its texture and sweetness. The sweetness of this fruit blends so nicely with the onions, peppers, cilantro, and the tartness from the lime juice. It is a great twist on your traditional salsa and pairs well with a spicy dish, as a dip with Oven-Baked Tortilla Chips, as a topping on Easy Cuban Black Beans, or is simply fine on its own.

Sweet and Sassy Jackfruit Salsa has 6 key ingredients:

  1. fresh (ripe) jackfruit
  2. red onion
  3. jalapeno
  4. red bell pepper
  5. cilantro
  6. lime

You'll need a knife, cutting board, and mixing bowl.

Ingredients  

  • 2 cups fresh jackfruit chopped
  • 4 Tbsp diced red onion
  • ½ of large jalapeño diced
  • ¼ cup diced red bell pepper
  • ¼ cup fresh cilantro finely chopped
  • Juice from ½ of a lime
  • Salt to taste

Instructions

  • Combine all ingredients into a mixing bowl, and serve. Can be used as a topping for tacos, a rice and bean bowl or with Oven Baked Tortilla Chips.

Leftovers: Store leftovers in an airtight container in the fridge for up to 4 days.
