Soy Yogurt

In the world of dairy alternatives, homemade soy yogurt stands out as a versatile and nutritious option. Many store-bought soy yogurts can be expensive or filled with added sugars and preservatives. The good news is that you can easily make your own smooth, creamy, and delicious soy yogurt at home in only five minutes using silken tofu. This lightly sweetened vanilla-flavored vegan yogurt recipe is gluten-free, nut-free, and has no added sugar.

In full disclosure, this is not your traditional, long-fermented yogurt. But it's a fantastic alternative if you love the taste and want a fast and easy way to make your own. You'll need a blender to make this. I like the Nutribullet personal blender for this recipe. This recipe yields four to five servings, making it great for meal prep!

Why Choose Silken Tofu for Soy Yogurt?

Silken tofu, known for its smooth and creamy texture, is the ideal base for soy yogurt. Unlike firm tofu, which is denser and better suited for savory dishes, silken tofu blends effortlessly, creating a yogurt that’s rich, velvety, and satisfying. Ingredients You'll Need

  1. Silken tofu
  2. Lemon
  3. Homemade date syrup
  4. Vanilla bean powder (or alcohol-free vanilla extract)
  5. Probiotic capsule—I used MegaFood MegaFlora 20 Billion CFU (optional)

These ingredients are easy to find in most grocery stores, and you can adjust them according to your personal preferences. For example, if you prefer a sweeter yogurt, feel free to add more homemade date syrup. If you’re looking for an unsweetened option, you can skip the date syrup altogether. Add more lemon juice to boost the tanginess.

The probiotic capsule is optional. The data surrounding probiotic supplements are mixed. In fact, some experts find probiotic supplements to be of no value to people who have normal gastrointestinal tracts. But if you take a probiotic and want that boost, feel free to add one to two capsules to this yogurt. What maintains a healthy gut is the fiber from eating a diversity of whole plant foods.

How to make this fast and easy yogurt

Drain the silken tofu. Use a clean tea towel or paper towel to gently remove the excess water.

You can certainly enjoy this smooth and creamy yogurt immediately. But for best results, refrigerate for at least an hour to chill.
