Add strong coffee, pumpkin puree, ¾ cup of soymilk, pumpkin pie spice, vanilla bean powder (or vanilla extract), a pinch of salt and pepper, and pure maple syrup into a mini bullet blender cup.

Blend the pumpkin latte mixture until smooth and creamy.

Ingredients  

  • ½ cup strong coffee (or 2 shots espresso)
  • 2 Tablespoons pumpkin puree
  • 1 cup soymilk (plain and unsweetened), divided
  • 1 Tablespoon pure maple syrup (adjust to your taste preference)
  • ½ teaspoon pumpkin pie spice
  • ⅛ teaspoon vanilla bean powder (or 1 teaspoon vanilla extract)
  • 1/16 teaspoon sea salt (a pinch)
  • 1/16 teaspoon black pepper (a pinch)

  • Add strong coffee, pumpkin puree, ¾ cup of soymilk, pumpkin pie spice, vanilla bean powder (or vanilla extract), a pinch of salt and pepper, and pure maple syrup into a mini bullet blender cup. Blend until smooth and creamy.

    I used to be a daily drinker of pumpkin spice lattes at Starbucks. Not only does this homemade version taste better and healthier, but it's a fraction of the price I used to pay at the coffee shop. It also takes a lot less time to prepare compared to the commute to the coffee shop. It's a quadruple win (healthier) - win (tastier) - win (faster) - win (less expensive)!
