This tasty pumpkin spice milk latte is made without coffee and can be served warm or iced. With only 4 to 5 key ingredients, this lightly sweetened drink is gluten-free, vegan, and nut-free.

This latte pairs nicely with Pumpkin Oatmeal Bars.
The key ingredients in this pumpkin spice latte (without coffee)
- Unsweetened, plain soymilk (or other plant based milk)
- Pumpkin puree
- Pumpkin pie spice
- Simple Homemade Date Syrup (or pitted date)
- Mushroom powder (optional)

I used soymilk, because it provides a rich creamy texture. In addition, adding soy to my daily routine is beneficial for heart health. Soymilk is also a great source of plant-based protein. Of course, if you have a soy allergy, feel free to use another unsweetened, plain plant-based milk.
How to make this pumpkin spiced milk
Combine all ingredients* into a mini blender and blend until smooth and creamy.
*Note: If you don't have Simple Homemade Date Syrup on hand, soak a pitted date in boiling hot water for 5 to 10 minutes to soften. Then add it to the mini blender with other ingredients and blend until smooth and creamy.
Pour the blended mixture into a small pot and warm over medium heat. Gently stir with a whisk to make sure no lumps form.

When the mixture starts to simmer, turn off the heat. Carefully pour the latte mixture into a mug, and enjoy!

Cool off with an iced pumpkin spice latte
While pumpkin spice is most popular in the fall, this latte can undoubtedly be enjoyed year-round, including during the hot summer months.
If making an iced pumpkin spice latte, remove from heat and let the mixture cook to room temperature. Pour over ice and enjoy!
