How to make this healthy fruit pizza
This recipe makes two yummy fruit pizzas. These pizzas can be enjoyed as a healthy dessert or even breakfast!
Prepare the tortilla pizza crust
The sprouted grain tortillas are the pizza crust for this healthy fruit pizza. Start by toasting and cooling the sprouted grain tortillas. We use Food for Life brand Ezekiel 4:9 sprouted grain tortillas, which can be found in the freezer section of your grocery store.
To toast, place the thawed tortilla in the air fryer at 350ยฐF (175ยฐC) for 3 minutes to toast. Flip it and continue cooking for another 1 to 2 minutes or until toasty. You'll want to air fry each tortilla by itself (i.e., don't stack the tortillas for best results), so repeat this step for the second tortilla.
If using an oven, preheat it to 350ยฐF (175ยฐC). Place the thawed tortillas on a cookie sheet. Bake the tortillas for 9 to 12 minutes, or until toasty.
Remove the tortillas from the air fryer or oven, and set them on a rack to cool to room temperature.
Make the sauce and toppings
Prepare the Sweet Cashew Cream and set aside.
Slice the strawberries and kiwi. Chop fresh mint.
Assemble and enjoy!
Assemble this healthy vegan fruit pizza by adding a generous layer of Sweet Cashew Cream to the base of each prepared tortilla. Arrange the fresh fruit on top. Top with fresh chopped mint. Slice with a pizza cutter or sharp knife. Enjoy!
Leftovers can be stored in a covered container in the refrigerator for up to three days.
