What you need to make these blueberry lemon overnight oats
- Rolled oats (use gluten-free oats if gluten-sensitive)
- Blueberries
- Fresh lemon
- Simple homemade date syrup (or pitted dates, minced)
- Plain, unsweetened almond milk (okay to use soymilk, coconut milk, hemp milk, or oat milk)
- Chia seeds
- Unsweetened coconut flakes
The overnight oats contain only lemon zest, no lemon juice. The lemon zest gives the oats a ton of lemon flavor without the sourness of lemon juice.
You can substitute minced pitted dates for simple homemade date syrup.

How to make this lemon blueberry overnight oats recipe
Zest the lemon with a microplane grater, taking care not to include the white part of the peel. All the lemon flavor is in the yellow part. See Pro Tip for what to do with the rest of the lemon.
Add rolled oats, simple homemade date syrup, lemon zest, chia seeds, and unsweetened almond milk into a mixing bowl. Stir well to combine.
Let the overnight oats mixture sit for 5 or more minutes to set up.
Layer fresh blueberries and overnight oats mixture into a mason jar. We recommend either the 8-ounce or 16-ounce mason jars. The 8-ounce mason jars will be packed tight, whereas the 16-ounce will give you some room to stir and eat without it spilling out.
Top the overnight oats mixture with unsweetened coconut flakes.
You can enjoy this delicious "overnight" oats jar immediately or put it in the refrigerator overnight. It will continue to thicken the longer it sits. If it's too thick for you, feel free to hit it with a splash of plant-based milk right before eating.
Leftovers store well in an air-tight container in the refrigerator for up to 3 days.

Lemon juice can be used to flavor water, or to make a salad dressing, such as tahini lemon garlic sauce, green goddess dressing, or vegan caesar salad.
What not to add to overnight oats
We don't recommend adding refined or brown sugar. The added sugar adds calories and no helpful micronutrients. Instead, your best bet is to use pitted dates or our simple homemade date syrup recipe that is unrefined. Dates provide nutrients not found in other sweeteners like refined syrups and sugar. They are a great source of potassium, copper, and magnesium. They also contain fiber.
