Ingredients for Lemon Blueberry Overnight Oats: rolled oats, blueberries, simple homemade date syrup, lemon, chia seeds, soymilk and unsweetened coconut flakes.
  1. Rolled oats (use gluten-free oats if gluten-sensitive): They provide a soft, creamy, and hearty base after soaking.

  3. Fresh lemon: This overnight oats contains only lemon zest, no lemon juice. The lemon zest gives the oats a ton of lemon flavor without the sourness of lemon juice.
  4. Soy milk: Plain, unsweetened soy milk provides a protein boost and a neutral taste, allowing the other flavors to shine. Feel free to substitute with another plant-based milk like Homemade Almond Milk, oat milk, or Homemade Hemp Milk.
  5. Homemade Date Syrup (or pitted dates, minced): Rich, caramel-like sweetness without the sugar spike.

How to Prepare

Step 1: Zest the lemon with a microplane grater, taking care not to include the white part of the peel. All the lemon flavor is in the yellow part.

  • We recommend either the 8-ounce or 16-ounce mason jars. The 8-ounce mason jars are compact and will be packed tightly, making them easy to put in a purse or backpack. The 16-ounce jars will give you some room to stir and eat without it spilling out.
  • You can enjoy this delicious "overnight" oats jar immediately or put it in the refrigerator overnight. It will continue to thicken the longer it sits. If it's too thick for you, feel free to hit it with a splash of plant-based milk right before eating.

How do I store leftovers?

Leftovers store well in an airtight container in the refrigerator for up to 3 days.

What not to add in overnight oats?

We don't recommend adding refined or brown sugar. The added sugar adds calories and no helpful micronutrients. Instead, your best bet is to use pitted dates or our Homemade Date Syrup recipe that is unrefined. Dates provide nutrients not found in other sweeteners like refined syrups and sugar. They are a great source of potassium, copper, and magnesium. They also contain fiber.

Can I use frozen blueberries in these overnight oats?

Absolutely! Frozen berries are a great solution, especially when berries are not in season.

What do overnight oats do to your body?

Healthy vegan overnight oats can be a great source of nutrients while making you feel full. These lemon blueberry overnight oats are high in fiber and beneficial for gut health. Oats are also a good or excellent source of iron, potassium, antioxidants, and phytochemicals believed to help lower cholesterol and have anti-cancerous properties. Blueberries are touted as a superfood because they're high in antioxidants and plant compounds shown to boost immune system health, have anti-cancer properties, and are good for heart health. Chia seeds are an excellent source of ALA omega-3 fatty acids—good for heart and brain health. Chia seeds have also been shown to lower blood sugar spikes.

  • 1 cup rolled oats (use gluten-free oats if gluten-sensitive)
  • 1 lemon, zested (not the juice)
  • 2 Tablespoons chia seeds
  • ⅓ cup homemade date syrup (or 2 pitted dates, minced)
  • 1 cup soy milk, plain and unsweetened
  • 1 cup blueberries
  • 1 teaspoon unsweetened coconut flakes
