This Easy Vegan Parmesan Cheese is only 3 ingredients and takes 5 minutes to prepare. It's gluten-free and soy-free. The vegan cheese goes beautifully on pasta, pizza, soup, and salad.

I love sprinkling this on Spaghetti Ragu with Meatballs, Veggie Pizza for One, and Simple Pasta Marinara. It's also a great topping for the Green Goddess Salad. This vegan parmesan cheese stores nicely in an air-tight container in the refrigerator for about 4 weeks.
Easy Vegan Parmesan Cheese ingredients are:
- Cashews
- Nutritional yeast
- Salt (a pinch to taste)
If you want more of a pesto-type flavor, use half cashews and half pine nuts, and add in a ½ tsp. of dried basil. If you want more garlicky flavor, add ½ teaspoon of garlic powder.

- ¼ cup raw cashews
- 1 Tbsp nutritional yeast
- Pinch of salt to taste optional
Instructions
- Place cashews, nutritional yeast, and salt (if using) into a mini bullet blender or mini food chopper. Process into a crumbly parmesan cheese consistency. Pulse a few times and shake to redistribute the mixture. Repeat until you achieve the desired consistency. See Notes below.

This is so awesome, instantaneous, simple it is delicious.
