Easy Vegan Parmesan Cheese

This Easy Vegan Parmesan Cheese is only 3 ingredients and takes 5 minutes to prepare. It's gluten-free and soy-free. The vegan cheese goes beautifully on pasta, pizza, soup, and salad.

I love sprinkling this on Spaghetti Ragu with Meatballs, Veggie Pizza for One, and Simple Pasta Marinara. It's also a great topping for the Green Goddess Salad. This vegan parmesan cheese stores nicely in an air-tight container in the refrigerator for about 4 weeks.

Easy Vegan Parmesan Cheese ingredients are:

  1. Cashews
  2. Nutritional yeast
  3. Salt (a pinch to taste)

combine raw cashews with nutritional yeast in a mini chopper and salt to taste

If you want more of a pesto-type flavor, use half cashews and half pine nuts, and add in a ½ tsp. of dried basil. If you want more garlicky flavor, add ½ teaspoon of garlic powder.

Equipment

  • 1 mini bullet blender

Ingredients  

  • ¼ cup raw cashews
  • 1 Tbsp nutritional yeast
  • Pinch of salt to taste optional
Prevent your screen from going dark

Instructions

  • Place cashews, nutritional yeast, and salt (if using) into a mini bullet blender or mini food chopper. Process into a crumbly parmesan cheese consistency. Pulse a few times and shake to redistribute the mixture. Repeat until you achieve the desired consistency. See Notes below.

Notes

When processing in a mini bullet blender, be careful not to over-process, because it will turn into cashew butter.

    This is so awesome, instantaneous, simple it is delicious.

    I used to buy the vegan shake cheese at the grocery store and feel bad about it knowing it was made with super processed ingredients. It wasn’t that great and always clumped and hardened and I would have to break it up with a knife.

    Now I have discovered this it is absolutely better than the store bought and has a beautiful texture to present at the dinner table in a small bowl with a spoon. Loving this!

    *game changer* soooo excited to never reach for one of those plastic shake cans again.. and be able to whip this up and feel like a gourmand instead 😍😍 👏👏👏🙏🙏🙏

      Yes! It's fast, simple, and not made with all those additives. Making your own is also more budget-friendly. Some of those store-bought brands are pricy.
