Make ahead our quick and easy homemade soy yogurt recipe because it only takes 5 minutes to prepare. It's sweetened with dates, not refined sugar. You can substitute with store-bought, but try to find one with no added sugar.
Combine rolled oats, chia seeds, plain almond milk, and homemade date syrup in a bowl. Stir well until fully combined. Let the chia seeds and oats absorb the liquid for 10 to 15 minutes.
Let it sit for 10 to 15 minutes for the chia seeds and oats to absorb the liquid.
Add ½ cup vanilla soy yogurt to the oat mixture. Mix it in to make the oats nice and creamy.
Assemble by evenly distributing the oat mixture to each of the serving cups or mason jars.
Place a layer of berries in each cup or jar.
Distribute the remaining soy yogurt evenly into each cup or jar.
Add the nuts and more berries.
Finish off with lemon zest and coconut shreds for a beautiful and delicious finish.
You can dig in immediately if you want. For best results, chill for 2 hours in the refrigerator. Enjoy!
