Start your day with this deliciously healthy vegan tomato avocado toast. It's nut-free, soy-free, and can be made gluten-free. Take it up a notch with some crumbled homemade vegan feta cheese.

Instructions
Prepare the Toast
Toast your bread slices. You can use a toaster for quick and easy toast, or a skillet for a bit of crunch and warmth. Aim for a golden brown that’s sturdy enough to hold the toppings.
Make the Avocado Spread
Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
Squeeze the juice of half a lemon over the avocado to prevent browning, and add some acid to the flavor.
Add a pinch of salt if using. Mash with a fork until smooth but still chunky.
Cut the Tomatoes
Quarter the cherry tomatoes and set them aside.
Assemble the Toast
Spread the avocado mixture over each slice of toasted bread. Top with the quartered cherry tomatoes evenly.
Sprinkle with dehydrated garlic, onion, and black pepper.
If using, finish off with crumbled vegan feta cheese for added salty creaminess and crushed red pepper flakes for a spicy kick.
*Note about leftovers: The toast is best fresh, but you can store the avocado spread and tomatoes separately in airtight containers in the fridge for up to 2 days.
