Ingredients
6 cups finely chopped kale, stems removed (curly kale works best)
1 medium-sized avocado, pitted and mashed
2 Tbsp nutritional yeast
1 Tbsp miso paste (or reduced-sodium soy sauce)
1 Tbsp lemon juice
1 Tbsp water
Instructions
In a large mixing bowl combine the avocado, miso, lemon juice and water, mixing well until creamy. Add chopped kale and massage with your hands or rubber spatula until leaves are coated with avocado mixture. Sprinkle nutritional yeast and give it a quick toss.Â
Optional add-ons include Roasted Chickpeas and sliced sweet red bell pepper.Â
