Rinse and drain oat groats in a fine mesh strainer.
Put rinsed oat groats into a medium pot with water. Bring to a gentle boil. Then reduce heat to low and cook partially covered for 18 to 20 minutes.
Carefully strain cooked oat groats, and return to the pot.
Stir in ground cinnamon and goji berries.
Carefully fold in blueberries. Note: If you're using frozen blueberries that have not yet thawed, you may need to turn the heat on low and put the lid on to warm the blueberries.
Portion out oat groats with berries and add sliced bananas, chia seeds, and unsweetened shredded coconut flakes, if using.
Drizzle unsweetened plant-based milk and enjoy!
Notes
Use texture as your guide. Properly cooked oat groats are chewy, but they should not have a hard center. Cooking time depends on the product and your preferred tenderness.
Watch the water level. If your groats need a longer simmer, add more water before the pan becomes dry.
Choose ripe bananas. They add more sweetness without needing added sweeteners.
Fold the berries in gently. This helps preserve their shape. For a more jammy bowl, stir them in more thoroughly.
Let the chia seeds soften. After adding the milk, let the bowl stand briefly if you prefer softer seeds and a thicker consistency.
Meal prep tip. Make a large batch of oat groats. When you're ready to eat them, then add the toppings to individual portions. This way, you can mix things up if you want.
Storing leftovers. Keep this prepared breakfast in a covered container in the refrigerator for up to four days. Reheat with a splash of water or plant-based milk, then add fresh banana.
