- 12.3 oz (349 grams) package of silken tofu (I used Mori-Nu extra firm silken tofu)
- 2 Tbsp fresh lemon juice
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt to taste (I used 1/4 tsp)
Put silken tofu, lemon juice, apple cider vinegar, and Dijon mustard into a blender and blend until smooth and creamy. Salt to taste.
This vegan mayo keeps well in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended.
