Instructions
Wash the cucumbers and mint thoroughly.
Remove the rind from the watermelon and cut the flesh into pieces that will fit through your juicer.
Peel the limes, removing most of the white pith to prevent bitterness.
Run the watermelon, cucumbers, limes, and mint through the juicer, alternating ingredients as you go.
Stir the finished juice well to combine.
Pour into mason jars with ice and enjoy immediately.
Notes
Chill the produce first. Refrigerating the watermelon and cucumbers before juicing gives you a colder drink without adding much ice.
Juice the mint between cucumber pieces. This helps move the lightweight leaves through the juicer rather than leaving them stuck inside.
Stir before every serving. Fresh juice naturally separates as it sits. Separation is normal and does not mean the juice has spoiled.
Drink it fresh. Fresh watermelon cucumber juice is best enjoyed immediately or within 24 hours. You can generally refrigerate it in an airtight container for up to two days, but its flavor and freshness will gradually decline.
