Ingredients

cup
rolled oats
use gluten-free, if gluten-sensitive

cup
almond or soymilk
1
Tbsp
ground flaxseeds
1
tsp
ground cinnamon
2
dates
pitted and diced
2
cups
chopped peaches
1
Tbsp
chopped walnuts
2
Tbsp
sweet cashew cream
optional
Instructions
Add rolled oats, cinnamon, ground flax, and chopped dates into a bowl. Mix to combine.
Pour in plain, unsweetened plant-based milk and stir well to combine.
Allow the mixture to sit for at least 5 minutes before assembling your jars.
Chop the peach(es) while the mixture is setting up.
Assemble your jars by layering the oat mixture and chopped peaches in the
mason jars
. Top with chopped walnuts and
sweet cashew cream
, if using.
Notes
Use fresh in-season peaches when possible.
These overnight oats keep well in the refrigerator for up to 3 days.
