1 14.5-oz.can fire-roasted tomatoesdiced or crushed with juices
⅓cupwhite or red onionchopped
1jalapeño pepper with seeds removedroughly chopped
⅓cupchopped fresh cilantro
1clovegarlicchopped
¼tspcumin powder
Juice of 1 lime
Salt to taste
Instructions
Put all ingredients into a large bowl and use an immersion blender to blend to desired consistency.
Enjoy with Oven-Baked Tortilla Chips or as a topping to rice and beans.
Notes
No Immersion Blender? If you don't have an immersion blender, use a food processor to pulse ingredients to the desired consistency.Leftovers/Meal Prep: Store salsa in an airtight container in the fridge for up to 4 days.
