Ingredients

  • 4 to 5 Baked Falafel patties
  • 1/4 cup Simple Homemade Pizza Sauce
  • 1/4 cup Epic Tahini Lemon Garlic Sauce
  • 1 sprouted grain tortilla, thawed
  • 1 1/2 cups fresh baby spinach
  • 1/4 cup chopped red onion
  • 1/4 cup sliced olives (no oil)
  • 1/2 cup chopped sweet bell pepper
  • 2 Tbsp fresh chopped parsley
  • 1/4 tsp crushed red pepper for heat (optional)

Instructions

  1. Prepare the Falafel. Set aside.
  2. Prepare the Simple Homemade Pizza Sauce. Set aside.
  3. Prepare the Epic Tahini Lemon Garlic Sauce. Set aside.
  4. Preheat the oven to 450° F (230° C).
  5. Place a thawed* sprouted grain tortilla onto a pizza pan or stone.
  6. Evenly spread the Simple Homemade Pizza sauce over the base.
  7. Add baby spinach, chopped red onion, bell pepper, sliced olives, and crumbled cooked falafel.
  8. Drizzle the Epic Tahini Lemon Garlic Sauce over the top. This adds a little moisture to the falafel and more flavor to the pizza overall.
  9. Bake the pizza at 450° F (230° C) for 10 to 12 minutes or until the crust is crispy and golden.
  10. Remove from oven and top with fresh chopped parsley and optional crushed red pepper for heat. Enjoy!

*If you're using the Ezekiel sprouted grain tortilla, you'll want to thaw it in the refrigerator the day before. You can do a quick thaw on the counter or microwave, but it might get crumbly.
