Description

If you're looking for a guilt-free dessert that's both creamy and rich in chocolatey goodness, this Tofu Chocolate Mousse is sure to satisfy your cravings! Made with silken tofu, cocoa (or carob) powder, dates, and a hint of vanilla, it's a delightful treat that's also surprisingly nutritious. It's gluten-free, nut-free, oil-free, low-fat, and vegan.


Ingredients

  • 1 16-ounce package of silken tofu (not regular tofu)
  • 2 Tbsp unsweetened cocoa, cacao, or *carob powder
  • 2 to 4 dates, pitted (depending on your desired level of sweetness)
  • 1 tsp no-alcohol vanilla extract (or a pinch of vanilla powder)

*Note: If you're doing the Daniel Fast, choose carob powder, which is caffeine-free, and fresh berries, shredded unsweetened coconut flakes, or sweet cashew cream as optional toppings since these do not have added sugar.


Instructions

Soak pitted dates in hot water for at least 5 minutes to soften.

Drain the silken tofu and gently press with a clean tea towel or paper towel to remove excess water.

Remove the dates from the soaking water and add them to a blender with tofu, cocoa (cacao or carob) powder, and vanilla. Blend until smooth and creamy. The texture should resemble a thick and velvety mousse.

Enjoy this creamy, chocolatey goodness immediately, or for a thicker consistency, refrigerate for at least one hour before serving.

Top fresh berries, sweet cashew cream, shredded unsweetened coconut flakes, shaved chocolate, or cacao nibs.
