Description
Like hummus, guacamole unites people of different dietary patterns. Guacamole is simply mashed up avocados with aromatics like garlic and onion, with herbs, spices, and fresh lime. This guacamole recipe is delicious, fresh, and perfectly seasoned. It's gluten-free, nut-free, soy-free, oil-free, and vegan.
Ingredients
- 2 avocados
- 1 small Roma tomato, diced
- 1/4 cup white (or red) onion, diced
- 1/2 jalapeño, with seeds removed and minced for mild (keep seeds for more heat)
- 1/4 cup cilantro, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 2 Tbsp lime juice
Instructions
Peel and pit ripe avocados and place into a medium mixing bowl. Using a fork, mash avocados. Add tomato, white (or red) onion, jalapeño, cilantro, garlic, lime juice, and cumin, stirring to combine. Add salt to taste. Enjoy with oven-baked tortilla chips, raw vegetables, or as a topping for veggie chili, tacos, fajitas, tostadas, nachos, breakfast burritos, or simple beans and rice.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The avocado will brown some; give it a stir before eating leftovers.
