Description

Cilantro lime ranch dressing is low in fat and calories. With less than 40 calories per generous serving, this tasty dressing is oil-free, nut-free, gluten-free, and vegan.


Ingredients

Units Scale
  • 6 ounces Silken Tofu (about half package of Mori-Nu, or whatever brand you have available)
  • 1 teaspoon apple cider vinegar
  • 1 small garlic clove, minced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried dill
  • 1/3 cup of fresh chopped cilantro
  • Juice from 1/2 lime
  • 1 tablespoons Homemade Date Syrup (or 1/2 pitted date soaked in hot water for at least five minutes to soften)
  • 2 to 3 tablespoons of water
  • Salt to taste

Instructions

If using a pitted date instead of homemade date syrup, soak the date in hot water for at least 5 minutes to soften.

Then add all the ingredients to a mini blender and blend until smooth and creamy.

Add more water for a thinner consistency. Salt to taste and enjoy!

Leftovers keep well in the refrigerator for up to five days in an airtight container, like a mason jar.
