Ingredients
6 oz. Silken Tofu (about half package of Mori-Nu, or whatever brand you have available)
1 tsp apple cider vinegar
1 small garlic clove, minced
1/2 tsp dried parsley
1/2 tsp onion powder
Pinch of dried dill
1/3 cup of fresh chopped cilantro
Juice from 1/2 lime
1 Tbsp Simple Homemade Date Syrup (or 1/2 pitted date soaked in hot water for 5 to 10 minutes to soften)
2 to 3 Tbsp of water
Salt to taste (I added a pinch or about 1/16 tsp)
Instructions
Place all ingredients into a blender and blend until smooth and creamy. Add more water for thinner consistency. Salt to taste.
Store unused dressing in an air tight container in the refrigerator for up to 4 days.
